Bananas About Ricotta Pancakes

Soft, fluffy ricotta pancakes topped with fresh banana, a drizzle of honey, and a sprinkle of poppy seeds. Perfect for a cosy breakfast. Make 4 pancakes.

100g ricotta
1 egg, beaten
70ml milk
60g flour
Pinch of baking powder
Spray oil
1 banana, sliced
Honey, drizzle
Poppy seeds, for garnish
Instructions

Mash the ricotta with a fork, adding the milk and egg to it.

Add the flour and baking powder, and combine well till you get a batter consistency.

Heat up your pan to medium heat with a little spray oil.

Drop half to ¾ of a ladle of batter into the pan.

Cook for 2-4 minutes each side until golden. Flip only when the pancake seems to have set.

Top with the banana, drizzle of honey, and sprinkled poppy seeds.
