All The Goodness Pasta Salad

A fresh, flavour-packed pasta salad with wholemeal pasta, crisp salad leaves, juicy tomatoes, olives, feta, and toasted pine nuts, tossed in a light mustard and apple cider dressing.

This Recipe Contains

250g wholemeal pasta, cooked
250g mixed green salad leaves
12 olives, halved
250g cherry tomatoes, sliced
1/2 red onion, sliced into half moons
75g feta, cut into small cubes
fresh basil, handful
30g toasted pine nuts
s&p
1 tbsp EVOO
1 tsp agave or maple syrup
2 tsp wholegrain mustard
1 tbsp apple cider vinegar

Add some s&p to the tomatoes, and let them sit for a while and absorb while you prepare the rest.

Combine the salad ingredients: cooked pasta, salad leaves, olives, cherry tomatoes, red onion, feta, basil, and pine nuts.

Make the dressing by combining the EVOO, agave or maple syrup, wholegrain mustard, and apple cider vinegar.

Add the tomatoes to the salad, and refrigerate for at least an hour if possible.

When ready to serve, combine the dressing with the pasta salad.
