Prepare and cook the chicken
Cut the chicken into small bite-sized cubes. Heat the olive oil in a frying pan over medium-high heat. Add the chicken cubes and cook, stirring occasionally, until they start to turn golden brown on the edges.
Add the vegetables
Add the chopped onion and diced bell pepper to the pan. Continue to cook, stirring frequently, until the onion becomes soft, translucent, and fragrant.
Season the mixture
Sprinkle the spice mix evenly over the chicken and vegetables. Stir well to coat everything in the spices. Let it cook for 1–2 minutes to allow the flavours to develop. Taste and adjust the salt if needed.
Prepare the tortilla cones
Take each tortilla and cut it in half to create two semicircles. Brush half of each semicircle lightly with BBQ sauce (this will be the inside of the cone and helps it stick)
Fill the cones
Place 1–2 tablespoons of the chicken mixture onto the sauced side of the tortilla. Grate some cheddar cheese and sprinkle it generously over the chicken. Add a couple of jalapeño slices for heat (optional but recommended).
Roll the tortilla cones
Place your index finger in the middle of the straight edge of the tortilla half. Lift one corner of the tortilla, fold it over your finger, and begin rolling toward the plain (un-sauced) side. Shape into a cone, ensuring the pointed end is sealed as much as possible so the filling doesn’t leak.
Arrange for baking
Carefully place each cone upright in a deep, oven-proof bowl or dish so they keep their shape. If you have extra chicken mixture or cheese, fill the top of each cone to the brim.
Bake the cones
Preheat the oven to 200°C (392°F). Bake the cones for about 10 minutes, or until they are piping hot, the cheese is melted, and the edges of the tortillas are lightly browned.
Garnish and serve
Remove from the oven and sprinkle with finely chopped parsley for freshness. Serve hot as a fun appetizer, snack, or party dish.
